About Inchdairnie Distillery
Inchdairnie Distillery in Fife, was founded by industry veteran Ian Palmer and began construction in 2014, completed in 18 months, and started distilling in December 2015.
It uniquely focuses on maximising flavour through seasonal ingredients and innovative techniques. It uses winter and spring barley varieties and four bespoke yeast strains that change with the seasons. Employing a hammer mill and mash filter, Inchdairnie produces a clearer wort, enhancing grassy and floral notes. Double shell and tube condensers increase energy efficiency and copper contact, refining the spirit. A unique Lomond still with plates is designed for future triple distillation. Inchdairnie’s single malt, described as a garden journey, offers floral aromas, cut grass, fruits, and spice from Sherry and wine cask maturation.
Until its single malt matures in 10-12 years, the distillery produces newmake spirit for Macduff International’s brands. Future expansion plans aim to meet growing demand, securing InchDairnie’s role in the Scotch whisky industry.
