About Lindores Abbey Distillery
Founded in 2013 Lindores Abbey distillery, honours the 800-year-old Tironensian structure and it has one wash still and two spirit stills producing lightly peated Lowland malt with barley from nearby farms, malted at Muntons.
Maturation occurs on-site in a special warehouse, 25% of which is heated to accelerate aging.
Lindores has collaborated with Heriot-Watt University to recreate a 15th-century yeast for a limited edition single malt and produces ‘aqua vitae,’ a malt spirit infused with local herbs. Future plans include using fruit from the Abbey’s orchard.
The Mackenzie Smith family aims to create a ‘world class visitor attraction’ at Lindores, teaching about the Abbey’s history and whisky production. Founded in the late 12th century, Lindores Abbey is known as the ‘spiritual home of Scotch whisky’ due to the first recorded mention of whisky production in Scotland in 1494.
